Some meals can be made overnight. Others make for great freezer meals. Most take 8 hours in the slow cooker. I have never tried making a pumpkin pie in the slow cooker or a gooey Peanut Butter Cup Pudding Cake either. You can pour all the ingredients together for Rice Pudding. There is no need to cook the rice separately. The Peach Cobbler recipe sounds yummy for a summer treat, along with Berry Cobbler. Looking forward to trying the Caramel Apple Crisp for Halloween and the Pumpkin Bread for a warm winters night. Pineapple Bananas Foster is light and refreshing with coconut milk and rum. I'm anxious to try the No-Fuss Cheesecake. The Low-Carb Carrot Cake looks great, too. You will find a calorie, carb and fat count below the recipe. The author has shared some lovely recipes with us for cooking desserts in a slow cooker while we are free to do other things at hand. What a great tool for some great desserts to be enjoyed with family and friends!

Pumpkin Bread
The texture of this crock-pot Pumpkin Bread is phenomenal. The cream cheese makes it soft and moist.
Servings: 10
Ingredients:
3/4 c. pumpkin puree
4 oz. cream cheese softened
2 eggs
1/2 c. butter, melted
1 c. sugar
1 tsp. baking soda
2 c. all purpose flour
1 tsp. cinnamon
1/2 tsp. ground cloves
Directions:
1. Grease inside of slow cooker with non-stick spray
2. In a bowl, cream together pumpkin and cream cheese until smooth.
3. Add eggs, butter and sugar, mixing well after each addition.
4. Gradually stir in baking soda, flour, cinnamon and cloves until just combined.
5. Pour batter into slow cooker. Cover and cook on high for 3 hours.

Who is Charity Wilson? Charity Wilson is the loving mother of four children, well five if you count her husband of over 25 years. She has worked in various jobs over the years but realized one day home is where she needed to be. After a lot of deliberation and research, she decided to become a full-time writer. Being a full time at home mom and writer sounds like a lot of work and for good reason, it is. She loves every minute of the organized chaos that is her daily life. It is what fuels her ideas and inspires her to write the books she does. She loves to share what she knows and is always willing to learn something new. She loves to cook and create new recipes which you will find shared throughout her various cookbooks. She stays up to date on the most current diets but doesn’t particularly follow any one of them. I love looking at the sun rays at daybreak. The promise of another beautiful summer day! This brightly colored Hibiscus greets us on our daily walk in nature. Aaround our home, the sagopalmm and queen palms are in blossom!
