Some meals can be made overnight. Others make for great freezer meals. Most take 8 hours in the slow cooker. I have never tried making a pumpkin pie in the slow cooker or a gooey Peanut Butter Cup Pudding Cake either. You can pour all the ingredients together for Rice Pudding. There is no need to cook the rice separately. The Peach Cobbler recipe sounds yummy for a summer treat, along with Berry Cobbler. Looking forward to trying the Caramel Apple Crisp for Halloween and the Pumpkin Bread for a warm winters night. Pineapple Bananas Foster is light and refreshing with coconut milk and rum. I'm anxious to try the No-Fuss Cheesecake. The Low-Carb Carrot Cake looks great, too. You will find a calorie, carb and fat count below the recipe. The author has shared some lovely recipes with us for cooking desserts in a slow cooker while we are free to do other things at hand. What a great tool for some great desserts to be enjoyed with family and friends!

Pumpkin Bread

The texture of this crock-pot Pumpkin Bread is phenomenal. The cream cheese makes it soft and moist.

Servings: 10

Ingredients:

3/4 c. pumpkin puree

4 oz. cream cheese softened

2 eggs

1/2 c. butter, melted

1 c. sugar

1 tsp. baking soda

2 c. all purpose flour

1 tsp. cinnamon

1/2 tsp. ground cloves

Directions:

1. Grease inside of slow cooker with non-stick spray

2. In a bowl, cream together pumpkin and cream cheese until smooth.

3. Add eggs, butter and sugar, mixing well after each addition.

4. Gradually stir in baking soda, flour, cinnamon and cloves until just combined.

5. Pour batter into slow cooker. Cover and cook on high for 3 hours.

Who is Charity Wilson? Charity Wilson is the loving mother of four children, well five if you count her husband of over 25 years. She has worked in various jobs over the years but realized one day home is where she needed to be. After a lot of deliberation and research, she decided to become a full-time writer. My Review


It's an old fashion story written in rhyme with a variety of pencil illustrations. I found it to be a timeless read, taking you back to simple times, whether read alone or with your children aloud. You'll hear of fairies, family values, winter traditions and Christmas memories. I especially like the chapter, Great-Grandmother's Wish. My favorite quote from the book, "Give to me and to my daughters to the eleventh generation the lucky finger and the loving heart."

Apparently author Daniel Tyler has written quite a few recipe books on fish and vegetables. Here's an E-book I got for free awhile back and recently had the chance to go through some of the recipes. This one is found on page 56. I haven't tried the recipe yet but I like Tilapia and have always cooked it with a sliced almond batter. Do you like Tilapia? It's such a mild fish.

Stuffed Tilapia with Cheese and Broccoli


Prep Time: 15 mins.
Cook Time: 35 minutes
Ready In: 50 minutes
Servings: 4

Ingredients:

1/4 cup grated Parmesan cheese
1 cup frozen broccoli, thawed
1 8-ounce container soft-style cream cheese with chives and onion
2 tablespoons milk
2 tablespoons dry white wine
3/4 cup herb-seasoned stuffing mix
1 beaten egg
4 ounce fresh or frozen skinless sole, flounder or other fish fillets, about 1/4 inch thick.

Directions

1. In a bowl, mix in egg, 1/2 of the cream cheese and Parmesan cheese, drained broccoli, stuffing mix then scoop 1/4 of the mixture on the end of each fillet, roll, then use wooden toothpicks to seal roll.

2. If cooking in the microwave, cover rolled fish on the dish with vented plastic wrap then cook in the oven for 8 - 10 minutes over 100 degrees.

3. If cooking in the oven, put rolled fish on a greased baking dish then bake covered for 35 minutes over 350 degrees.

4. As for the sauce, heat remaining cheese, wine and milk in a small saucepan, stir well. Serve.


My Review

The book is well organized beginning with 31 Flounder recipes. The Catfish section has 18 recipes to try. My favorite section is the Tilapia recipes. You'll find 31 outstanding recipes from broiling, frying, steaming, broiled, stuffed and grilled fish to try. In addition, the sweet and spicy sauces served with Orzo or Quinoa make a complete meal to enjoy.  The men in my family like the Trout section with 31 recipes in the category to try.  The Salmon recipes are a huge hit, enjoying 31 more great recipes to make. Haven't tried the Flounder or Catfish ones yet but I am impressed with the tilapia and salmon meals the most because the measurements are accurate and the taste is good. I would have given this one 5 stars but there were many typo errors I discovered along the way and I felt a photo or two would have been nice to see. If you like the fish, this one is a hit.

My Review


My grandson enjoys holding the large size sturdy board book and pointing to the many colorful animals, calling them by name. It's a cute and funny story of rhymes (maybe not so Biblical but it's juvenile fiction) regarding the animals crowding onto Noah's bed, two by two. The elephants are grand, the boars grunt and groan, the quail squeak and squawk, the lightning spooks the sheep and the tigers are nervous as the ark tips in the storm. When the stinky skunks show up, everyone runs and Noah begins a sleepy night time tune.

 I like the book and the refreshing approach by the author to an all time favorite story but I missed seeing Noah's wife inside the ark. Plus, I don't like snakes very much. Although they are long and yellow and it appears everyone is getting along in the ark, I thought it was an over kill of snakes on every page... I'm just saying. I think the illustrator likes snakes! lol

"Which three animals are hiding?"

Review


The book begins with counting the letter A's. Children are such great visual learners, and right away the author asks the question, "Can you see any letter B's?" The repetitive pattern to learning here is 'See' and 'Count.' It's educational, fun and very engaging. Kids will make a huge connection with many adorable animals, plus easy to read letters and numbers. Boys and girls will especially like the hippo, iguana, newt, meerkat and unicorns. I know my 5 grandchildren are delighted with the book and I really like the bright colorful illustrations. The dimensional textures are great! It's a good message for early readers to discover on their own and share aloud with brothers/sisters. The ending is quite exciting in finding hidden animals on the pages. I've looked at tons of counting books and this one is top notch! I highly recommend for home and school library. Parents and grandparents get this one. You won't be disappointed.

 My Review


This is an appealing book about finding solutions and allowing children the freedom of choice. Truthy Ruthy doesn't have any money because she's only 5. She wants to surprise her family with Christmas gifts. Experiencing a series of 3 dreams and left with a surprise box from Santa, children will learn to be creative, like making their own jewelry. Perhaps taking the initiative to discover a different approach in being creative, or experiencing a narrow perspective of being very disappointed. The 3 separate stories are the same but focus on a birthday surprise. Overall, there are many simple illustrations for the young people to see and interaction for older children. Many lessons to be learned.

My Review


The story begins with a camper, while located upstream he soon forgets and leaves a book behind. The black bear twins named Archisha and Minninnewah start to read it and learn all about bears. The book is overflowing with some new and great information regarding:

Spectacled Bear
Brown Bear
Grizzly Bear
Kodiak Bear
Giant Panda
Sun bear
Polar Bear

For instance, did you know that Polar Bears swim 100 miles without tiring? Children between the ages of 5-8 will learn that a daddy bear is a Boar and mommy bear is a Sow. The author shares that almost all bears look alike. One important fact to glean from the book is that bears see and hear as well as humans but they have a special organ that is in the roof of their mouth so they can smell food from several miles away. The adventure of learning all about bears is fun and educational for young people and adults, too.

He loves to explore the jungle he lives in. The weather is always sunny and there are meadows, ponds and fruit trees everywhere. "Jojo, come and eat," Mama calls out. Jojo hides behind the bushes. Hide and seek is his favorite game.

My Review


The talented author weaves a great story about the sights, tastes and smells of India through the playfulness of an elephant calf named Jojo. Naturally his favorite game is Hide & Seek. The warm landscape of India comes alive as Jojo soon discovers all that inhabits his jungle. After playing his favorite game, Jojo gets easily distracted with happy birds, fluttering butterflies, frogs and dragonflies. He forgets his mother is calling out to him and now hunger has set in. The story line moves along at a good pace for little ones to engage in identifying animals and food of the jungle. The beautiful illustrations capture Jojo's fun adventures on his wonderful playful day. It's a sweet book for the children and very engaging for 2-5. Older kids can read the book alone or with help.

About The Book

As a raw foodie, can you guess what question I get asked most often?

Well, it isn't, "how much weight have you lost?" or, "have you seen a dramatic improvement in your health?" (yes), or, "do you generally just feel a lot better on a raw food diet?" (yes), or, "is it true you have more energy than ever on your diet?" (yes)... no, the question I get asked the most is...

"Where do you get your protein?" (ugh!)

"Ugh" Not only do I get tired of answering the same question over and over, but also because the question is misguided.

The fact is that it is easy to get enough protein on a raw or plant-based diet, and I've written this book to demonstrate just that.

And no, my recipes aren't bland mixtures of foods clinically formulated to provide protein requirements. These are amazingly yummy raw meals and drinks like: raw hot chocolate, cashew pesto sauce, raw tortilla chips, raw cinnamon rolls with icing, breakfast crepes, raw chili, macaroni and cheese, and raw lasagna.

You get the point. These meals are quick and easy to make, amazingly tasty and they provide plenty of protein.

I visited my parents recently and my mom made a raw dinner for our family. All the dishes were from my book. Being the trouper that she is, she also prepared "normal" (non-raw and non-vegan) versions of the main dishes for my dad (let's just say he isn't known for being open to new foods). Much to everyone's surprise, my dad never touched the normal versions of the dishes, and was asking for seconds of the raw dishes.

In the beginning of the book, I lay out all the facts you'll need to prove to yourself and your concerned friends that a raw or plant-based diet provides all the protein you need, even if you're a high-performance athlete like Carmelo Anthony and Venus Williams (both of whom eat a plant-based diet).

Each recipe comes with its protein content in grams per serving. Use the introduction section to calculate how much protein you really need per day (much less than you've been led to believe) and then add up your meals' protein content and you will be enjoying the amazing benefits of the raw food lifestyle with none of the "where do you get your protein?" concerns.

Being a raw food chef myself, I've also included the "total time" involved for each recipe. If you're like me, you've probably pulled out your favorite raw cookbook and start preparing a meal for tonight's dinner only to find out there is 18 hours of dehydrating time that wasn't mentioned in the recipe. In this book, I break down soaking times, marinating times and dehydrating times and prep times, so you'll know exactly how far in advance you need to begin to prepare each meal.

Also, I'm a simple chef. I don't like having to buy a package of something for $8 from the health food shop that I'll only need in a raw recipe once every 2 years. With these recipes, I've made sure they can all be made with common and readily available ingredients.

And finally, I've made sure that the recipes can all be accomplished quickly and easily. While some do have extra hours needed for dehydrating or soaking, the actual preparation times are, in most cases, quicker than traditional home cooked meals.

My Thoughts

The author presents a very meaningful message for better health, explaining the benefits in eating raw foods. I was impressed with the plethora of excellent information regarding the need for protein; just how much to have and why we need protein. There is so much to learn here. What I especially like is the valuable content on soaking nuts and seeds, along with understanding enzyme inhibitors. This is not a hard, technical book to understand but one of the superb recipes that are simple to make with a little bit of prep work involved. You can confidently share with family and friends that you are indeed getting enough protein with many plant-based foods. I have tried 21 delicious recipes so far and I am recommending the book to friends. I don't want them to miss out of having overall better health.

Cashew Pesto with Basil

2 c. basil leaves
1/2 c. olive oil
3/4 c. raw cashews, soaked several hours
1-2 large garlic cloves
1 handful watercress or parsley
Juice of 1 lemon, pinch of salt

Pulse for 30 seconds, slowly. Pour in olive oil.

One of my grandson's eating choices is all natural, raw fruits and vegetables. Yes, he likes Mac n' Cheese along with the other 4 grandchildren... but Ryan eats mostly raw foods.  As I get older, I find myself changing in the area of food choices. How about you?
